December 2022

I love the holiday season. The magic that follows the twinkling lights, decorated yards, holiday music, festive attitudes and spirit of giving elevates us all. I love the higher quality time spent with friends and family. This is when people truly connect with each other, and connection is really what your magazine is all about: Your stories. Your photos. Your community! I am passionate about continuing to make Stroll Eaglewood a joy-filled, valuable resource exclusively for this incredible community. My goal is to connect you personally and professionally with people who will bring good to your life. My hope is you will always find something that resonates within you, informs you, or just brings a smile to your face. It makes my heart happy to hear personal stories of residents and businesses who have made connections because of Stroll Eaglewood and how some of these connections are creating new friendships, rekindling old ones, creating playdates and lunch dates, and helping homeowners find trusted businesses to meet their family’s needs. Every single resident, whether young or young at heart, is welcome to participate in Stroll Eaglewood. As we look ahead to our 2023 issues, please share your stories … your love stories, vacation stories, athletes,

personal and family achievements, big life events, graduations, new businesses, fun stories, etc. Send them our way and we’ll build an article with images of your story for free. In 2023, I’ll be creating Stroll Eaglewood’s Resident Business Guide. If you own a business, I want to let everyone around you know about your special business or passion and help you get noticed more. As a gift, we offer a complimentary one-month business advertisem*nt in the form of a deeper story and pictures. Lorrie and I hope we all continue to work on spreading happiness by sending more notes and cards, making goodies, delivering joy to friends and neighbors, and remembering to share with those that need it. As lights twinkle and snow blankets our yards, let’s look forward to the new ways we’ll find to enjoy our time and our families. Please pause and savor the season and get ready for a fresh slate. As you thumb through the pages of each issue, it is my hope that you find your community brimming with positivity, empathy, generosity, great people and fun! I raise a glass of eggnog to you all for the warmest and most joyful holiday season – With gratitude, Scott, Lorrie and the G-Baby

P RECIOUS PETS

MEET LOUIE

Hmm?

Minky Blankie

and fall. Temperate weather suits me. We live high up on the hill and can see the beautiful valley below. I enjoy seeing the change of seasons; leaves turning gold and red, then snowy rooftops and mountains, then flowers pushing their way up from the earth and finally the heat shimmering off the Great Salt Lake. We live in a beautiful place. One of my guilty pleasures is digging through trash cans. My humans wish I could give this up, and I’ve gone stretches without any digging, but the temptation is always there. Usually, I just find Kleenex, but every once in a while I find treasures like chips or candy. Really it is the hunt that appeals to me, the rush of potential looming.

Not unlike most dogs, I cannot pass up taking advantage of my humans leaving food out. I have short legs; nevertheless, I can jump impressively high. One afternoon my owners left a bowl of tomato soup on the counter, and I used the stools to jump up and eat it. I was mid-slurp when the humans walked in and caught me. I looked up with guilt and fear, but instead of yelling, they all burst out laughing. “Louie looks like he murdered someone!” they screamed. The tomato soup had dyed my white fur red in a circular ring around my mouth. I was relieved they found humor in the situation, but mostly relieved that I ate most of the soup before they caught me.

Louie and Grandpa — best buds.

My name is Louis (Louie for short), and I am named after King Louis XIV, who was king of France for 72 years. He was the longest sovereign in history and was known as the Sun King. He waged many wars, but also loved and developed ballet. Sometimes I feel intimidated that I am named after someone that was versatile and powerful enough to juggle starting wars and staging great ballets, but I try to remind myself that we all have our strengths. I honor his legacy while finding my own way. I have white curly hair and a small, long body. When I walk my left ear folds back, revealing a pink underside. When my hair grows long and fluffy my owners worry that I have gained weight, but when I get a haircut, they laugh and say that I look like a skinny white rat.

December 2022

I love taking naps under soft blankets. My favorite blankets are Minky Coutures, and each of the six kids in my house has one. How do they get those blankets to be so soft? I also love going on car rides and will sneak in the car whenever someone is leaving the house. A couple of times I have made it all the way down the hill before my humans noticed. They yell “Louie!” with frustration and quickly turn the car around. I should probably stop doing this, but I won’t. I press my nose up against the window and watch all the things that are happening outside whiz past me. I don’t enjoy long walks; I prefer short ones. Sometimes I worry that I am not exercising enough, and I make goals to be more active. However, I find it so challenging once winter comes! It’s cold outside! I find that I am most fit in the spring

Sometimes I worry that I am not exercising enough, and I make goals to be more active. However, I find it so challenging once winter comes! It’s cold outside! I find that I am most fit in the spring

I know I have a great life. I live with six kids, and they all love me. They fight over who gets to sleep with me at night, so I take turns in each of their beds. I love to cuddle, and I love to be petted. I am happiest when everyone is home laughing and playing and eating good food. I see deer, wild turkeys, bunnies and squirrels in my backyard. My humans like to play capture the flag in the backyard, and I love watching them. I will turn 3 in December and all I want for my birthday is a bone and a long belly rub. Life is good in North Salt Lake.

You

Hello — we are the Marcheschis. I am Olivia, the middle child in a family of five. I have an older sister and a younger brother. We have two dogs — a lab and King Charles spaniel. I am from Bountiful, Utah, and have lived here my whole life. Stephen is the only boy and the middle child in a family of 10. He has seven sisters. They have one dog — a co*ckapoo. He

was born in Boston, moved to Idaho at an early age, and then moved to Bountiful at age 12. Your History

Stephen and I knew of each other in elementary school through mutual friends. We lived about a block away from each other but went to different elementary schools. In

the sixth grade, I would see him walking home from the bus stop as I drove by with my mom and always hollered his name from the car window. Stephen and I met “officially” in junior high Bonneville Salt school. In the Flats: Photo Credit: Megan Baker - With summer before Megs Photography eighth grade, our paths collided and we both started crushing hard. It was on and off all throughout junior high and early high school. We started officially dating during our junior year at Woods Cross and continued through senior year all the way until Stephen left on his mission to Madagascar in the summer of 2018. I left to go play soccer at Weber State

Your Professions

I am an Account Executive for LendSure Mortgage Corp, a non-QM mortgage lender. For those unfamiliar, we offer niche programs and products designed for people who do not fit in the box to qualify for a conventional mortgage loan. Examples would be self-employed borrowers who write too much off on their taxes and don’t show much income on their returns or big-time investors who want to purchase many different investment properties. On the side, I work part-time for Torrent Cycle — the best indoor cycling studio in Utah! I work at the front desk a few times a week because I love the people there and it is such a fun community to be a part of. Stephen is currently working for a company called Aura. It is a tech sales company that offers proactive protection for everything and everyone that matters to a family. He will also be attending the University of Utah in the spring to finish up his degree in business. Your Passions

Stephen and I start our mornings off by going to CrossFit 801 together. We love working out with each other and with our gym family. We just love the push that CrossFit has given

us to challenge ourselves! It is the best way to start out the day and spend time with each other. We also love to go trail running. There is a great trail right in our neighborhood that is our favorite, especially during the fall when the leaves are changing colors. Stephen and I are both competitive and never shy away from some intense one-on-one pickleball matches. Stephen loves to fly fish and has been teaching me to do it as well. Hiking up to mountain lakes with our fly rods to fish and have fun is a wonderful way to spend quality time together outside. Our favorite restaurant is Osteria Amore near the U of U campus. I think they have the best pizza and pasta in Utah. Off the restaurant is the cutest little patio and it is always our favorite spot to go for a date night. Our classic date night consists of dinner, great conversation and a movie. One thing that we both feel so incredibly grateful for is our families. We both come from

Puff Pastry Christmas Tree — yum!

• Remove the puff pastry from boxes. Bring the puff pastry dough pieces to room temperature. • Put the spinach, paprika, onion powder, salt and pepper in a food processor and mix well. • Flour the counter, lay out three rectangles of puff pastry dough on top of each other, sprinkle flour on top and roll into a 10-12” rectangular shape with a rolling pin. • Do the same for the three other puff pastry sheets on another section of the countertop. • Cut each rectangle into a tall triangle with a knife or dough cutter. Crock Pot Ham

Instructions Scrub and dry the potatoes. I like my skins to be a little bit crispy, so I prefer to brush them with olive oil and sprinkle them with a little bit of salt before baking. If you prefer the skins to stay soft, you can wrap them in aluminum foil instead. Either way, make sure to pierce them with a fork three or four times before baking. Bake at 375 degrees F for an hour, or until the centers are soft when poked with a fork. • Remove the potatoes from the oven and slice each one in half horizontally. • In a mixing bowl, combine the Alfredo sauce, garlic powder, mozzarella cheese and half of the cheddar cheese. Once combined, scoop out the pulp and add it to the sauce mixture. Mix until completely combined and then put the mixture back into the potato skins. • Sprinkle them with the remaining cheddar cheese and then put them back in the oven for about five to six minutes, or until the cheese on top is completely melted. Serve immediately. Crock Pot Ham is my favorite holiday recipe, with just four simple ingredients and it can be made in one pot. This slow cooker ham recipe is made with brown sugar and pineapple, which provides a wonderful sweet and tangy flavor. Prep Time: 10 minutes Cook Time: 4 hours Total Time: 4 hours 10 minutes Ingredients • 2-7 lb. ham, boneless or bone-in • 1 20-oz.can sliced pineapple • ⅓ cup brown sugar • ½ tsp. ground cloves Instructions — How to cook your ham in the Crockpot • First, while your ham is still in the packaging, place it in the crock pot to see how it fits. You may need to cut it into portions to fit it in the crockpot. Then, unwrap it and either place it whole back in the crockpot or cut it into pieces to fit in the crockpot. You can also choose to pre-slice it if you would like. 34

Pumpkin Pie Slab

• Next, open the can of sliced pineapple and drain the juice out into a separate bowl. You will use all of the juice so set it aside; do not discard! • Then, measure out the 1/3 cup of brown sugar and add it to the bowl with the pineapple juice, whisking to dissolve. After that, add in the 1/2 tsp. of ground cloves and whisk to combine. Set juice mixture aside. • Now, arrange the slices of pineapple all over the surface of your ham and in between slices if you pre-sliced the ham. • If you chose to include cherries, place them inside the center of the pineapples. • Lastly, pour the pineapple juice mixture over the entire top of the ham and pineapple slices. • Now, place the lid on the crock pot and cook on low for three to four hours.

• 2 ¼ tsp. pumpkin pie spice • ¾ tsp. salt • 2 ¼ cups canned pumpkin; you’ll need two 15-oz. cans • 2 cups evaporated milk; you’ll need two 12-oz. cans

Note: A 7-10 lb. ham cooked in the Crockpot takes about four hours. A bone-In ham will take five to six hours to fully heat up. If you have a smaller, 2-4 lb. ham, aim for around two hours of cooking time. How to cook your ham in the Instant Pot can be found at Butterwithasideofbread.com Pumpkin Slab Pie is a classic holiday dessert made in a sheet pan and serves a crowd! Everything you love about pumpkin pie in an easy-to-serve slab pie style with plenty of buttery pie crust! Prep Time: 30 minutes Cook Time: 25 minutes Total Time: 55 minutes

Pumpkin Pie Slab — ready to eat!

Ingredients • 28.2 oz. pie crust 14.1 oz. each refrigerated pie crusts (2 count each, so 4 rolls total), softened as directed on the box
